Inspired by the traditional Sicilian recipe "pasta ca 'muddica," it's incredibly simple to prepare and a delightful culinary experience.
Ingredients:
- 12 ounces linguine pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4-6 anchovy fillets, chopped
- 2 tablespoons capers, rinsed and drained
- 1/4 cup breadcrumbs
- Red pepper flakes, to taste
- Fresh parsley, chopped, for garnish
- Salt and freshly ground black pepper, to taste
Instructions:
- Cook the linguine pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant.
- Add chopped anchovy fillets and capers to the skillet. Cook for 2-3 minutes, stirring occasionally until the anchovies dissolve into the oil.
- Add breadcrumbs and red pepper flakes to the skillet. Cook for another 2-3 minutes, or until the breadcrumbs turn golden and crispy.
- Return the cooked linguine to the skillet and toss it with the breadcrumb mixture, ensuring the pasta is well coated.
- Season with salt and freshly ground black pepper to taste.
- Garnish with fresh chopped parsley.
