Speaking of easy Italian recipes, Linguine anchovies, capers and breadcrumbs, with its characteristic aromas and flavors, is a dish that brings the very essence of Sicily on your table.
This type of pasta has ancient roots, but, at the same time, the taste is very modern.
Inspired by the "pasta ca 'muddica”, a traditional Sicilian recipe, it’s very simple to prepare.
Do you want to try?
Linguine anchovies, capers and breadcrumbs
On a flat-bottom pan add 4 tbsp of Edward And Sons Organic Panko Breadcrumbs and toast on low flame. Then put the breadcrumbs on a plate (VERY IMPORTANT: do not leave the breadcrumbs on the pan, otherwise it will burn!)
On the same flat-bottom pan add 1 tbsp of Colavita Premium Extra Virgin Olive Oil and when the oil has heated up a little, add 8 anchovy fillets of Season Flat Anchovies in Olive Oil and 1.2 oz of Mediterranean Organic Capers. Sauté on low flame until the anchovies melt and the capers release their flavor
In the meantime, in a large pot boil 5 quarts of water, then generously season with salt
Upon boiling, throw in 1 box of Rummo Linguine Pasta and cook for 11-12 minutes. Before draining save 1/3 cup of pasta water
Once drained, add Linguine and the water saved to the anchovies and capers mixture and stir to combine
Sprinkle each plate with the previously toasted breadcrumbs
For an even tastier variant you can:
1. Add black olives and green olives
2. Add chopped fresh parsley and freshly ground black pepper as garnish
